Heat the iron properly
Preheat a small waffle iron until fully hot. Mix eggs, three-quarters of the cheddar, Parmesan and salt.

Scatter a little reserved cheddar directly onto the iron. Spoon over enough egg mixture to cover loosely, then add another pinch of cheese.
Close and cook for 3 to 4 minutes. Open only when the steam has reduced and the edges look deep gold.
Transfer to a wire rack without stacking. Repeat with the remaining mixture and let every chaffle sit for 2 minutes before eating.
