  • 700 gboneless skinless chicken thighs
  • 30 gbutter
  • 200 gSwiss brown mushrooms, sliced
  • 3 clovesgarlic, finely grated
  • 130 mlchicken stock
  • 250 mlthickened cream
  • 60 gfinely grated parmesan
  • 100 gbaby spinach

Get the chicken properly golden

Pat the chicken dry and season well. Melt half the butter in a wide frying pan over medium-high heat. Cook the thighs for 5 to 6 minutes per side until deeply golden and cooked through. Rest on a plate.

Brown the mushrooms

Add the remaining butter and mushrooms. Cook over high heat for 4 to 5 minutes without crowding until browned, not watery.

Build the sauce

Lower the heat, add garlic for 30 seconds, then pour in stock and scrape up the browned pan bits. Add cream and simmer gently for 3 minutes.

Make it glossy

Stir in parmesan a handful at a time, then add spinach and let it wilt. Return the chicken and any resting juices to the pan.

Finish, do not boil

Simmer for 2 minutes until the sauce coats the chicken. Taste for salt and cracked pepper. Keep the heat gentle so the cream stays smooth.
