Cottage cheese bread is everywhere because the dairy and eggs make an easy high-protein batter. The useful fix is psyllium and a proper rest. They absorb free moisture before baking, so the loaf cuts cleanly instead of squashing under the knife.

Stir in almond meal, psyllium, baking powder, salt and two-thirds of the seeds. Rest for 10 minutes until the batter holds soft ridges.
Spoon into the tin, level lightly and scatter the remaining seeds in a loose, non-uniform layer.
Bake for 48 to 52 minutes until deeply golden and firm through the middle. Cover loosely only if the seeds darken too quickly.
Stand for 15 minutes in the tin, then cool completely on a rack. Toasting the slices the next day makes the edges especially good.
