Blend cottage cheese, egg yolks, baking powder and salt until smooth.
Beat egg whites with cream of tartar until firm glossy peaks stand upright. Stop before they turn dry and grainy.
Fold one-third of the whites into the cottage mixture, then gently fold through the rest. Spoon eight deliberately uneven rounds onto the trays.
Bake for 23 to 27 minutes until golden and set. Cool on the trays for 10 minutes before moving to a rack.
