Chimichurri is better chopped than blended: visible pieces of herb, garlic and chilli stay bright and cling to the meat. Choose a tender steak and keep the pieces similar in mass, not mathematically identical.

Toss beef and vegetables with oil, salt and pepper. Thread onto eight skewers with breathing room between pieces.
Barbecue for 7 to 9 minutes, turning each skewer as its faces brown, for medium-rare beef and blistered vegetables.
Rest on a warm platter for 5 minutes. Spoon half the chimichurri over in rough patches so some char remains visible.
Taste the remaining chimichurri and add vinegar or salt if needed. Serve it at the table.
