Dough

  • 250 glow-moisture mozzarella, grated
  • 60 gfull-fat cream cheese
  • 150 gfine almond meal
  • 20 gground golden flaxseed
  • 1 large egg
  • 2 tspgluten-free baking powder

Garlic finish

  • 70 gunsalted butter, softened
  • 4 clovesgarlic, finely grated
  • ¼ cupflat-leaf parsley, finely chopped
  • 45 gfinely grated parmesan

Melt the cheese base

Heat the oven to 200°C with a tray inside. Microwave mozzarella and cream cheese in short bursts, stirring until smooth.

Work while warm

Mix almond meal, flax and baking powder. Knead into the warm cheese with the egg until no dry pockets remain. Shape into a 20 cm oval on baking paper.

Score and start the crust

Score deep diamonds without cutting all the way through. Slide onto the hot tray and bake for 16 minutes until puffed and just golden.

Load the garlic butter

Mix butter, garlic, parsley and half the parmesan. Push it into every score, then scatter over the remaining parmesan.

Finish hard

Bake for another 8 to 10 minutes until the edges are crisp and the garlic butter bubbles. Rest for 5 minutes, then pull apart at the table.
