Season the salmon
Pat salmon dry and rub with half the oil, paprika and salt. Leave thick and thin edges as they are.

Warm charred salmon, cool avocado, cucumber and lime tucked into crisp lettuce leaves. Built for hands, so torn fish and uneven cups are part of the pleasure.

Keeping the salmon in one piece for the pan, then flaking it by hand, gives tender chunks of different sizes. Small lettuce leaves become bites; larger ones become generous wraps—both are useful.

Heat a wide pan over medium-high. Cook salmon for 4 minutes on the first side and 2 to 4 minutes on the second, depending on thickness. Rest for 5 minutes.
Fold avocado, cucumber, lime and remaining oil with a pinch of salt. Stop before the avocado turns to paste.
Break the salmon into large and small natural flakes, following the grain rather than cutting cubes.
Spoon salsa into lettuce leaves, add salmon and tear over coriander. Serve extra filling beside the smaller cups.
