Souvlaki

  • 800 gboneless chicken thighs, cut into varied chunks
  • 3 tbspextra virgin olive oil
  • 1 lemon, zested and juiced
  • 3 clovesgarlic, crushed
  • 1 tbspdried oregano
  • 1 tspsweet paprika

Cucumber yoghurt

  • 200 gGreek yoghurt
  • 1 Lebanese cucumber, coarsely grated
  • 2 tbspdill, roughly chopped

Marinate the chicken

Combine chicken, oil, lemon zest and juice, garlic, oregano, paprika, 1 teaspoon salt and pepper. Refrigerate for 30 minutes.

Make a rough tzatziki

Squeeze excess water from the cucumber, then fold through yoghurt and dill. Season and keep chilled.

Build uneven skewers

Thread the chicken onto eight skewers without compressing the pieces. Fold thinner pieces over once and leave thicker ones open.

Grill until deeply marked

Cook over a medium-high barbecue for 10 to 12 minutes, turning when each face has released and browned. Check the largest piece is cooked through.

Rest, then pile

Rest for 4 minutes. Pile the skewers on a platter with the rough cucumber yoghurt and lemon wedges.
