Roasted cauliflower

  • 1.3 kgcauliflower, broken into varied florets
  • 2 tbspextra virgin olive oil
  • 1 tspsmoked paprika

Cheese sauce

  • 40 gunsalted butter
  • 200 gcream cheese
  • 250 mlpouring cream
  • 1 tbspDijon mustard
  • 250 gmature cheddar, coarsely grated
  • 80 gfinely grated Parmesan
  • ¼ cupfresh chives, sliced

Roast away the water

Heat the oven to 230°C. Toss cauliflower with oil, paprika, salt and pepper. Roast on two hot trays for 20 to 25 minutes until browned and reduced.

Build the sauce gently

Melt butter in a saucepan. Whisk in cream cheese, cream and mustard over low heat until smooth.

Add cheese off the heat

Remove from heat and stir in two-thirds of the cheddar, half the Parmesan and most of the chives. Season firmly.

Fold, do not drown

Put roasted cauliflower in a baking dish and fold through just enough sauce to coat. Scatter over remaining cheese.

Bake for the broken crust

Bake at 210°C for 12 to 15 minutes, then grill briefly until the top blisters in uneven dark patches. Rest for 8 minutes.
