Burrito brisket

  • kgbeef brisket, cut into 3 rough pieces
  • 2 tbspgarlic-infused olive oil
  • 1 tbspsmoked paprika, cumin and dried oregano
  • 1 tspground ancho chilli
  • 400 gcrushed tomatoes
  • 250 mlgluten-free beef stock
  • 2 limes, zest and juice

Lettuce burritos

  • 600 gcauliflower rice
  • 16 largecos or iceberg lettuce leaves
  • 300 gchopped tomato and coriander salsa
  • 1 avocado, roughly chopped
  • 120 gmature cheddar, coarsely gratedOptional

Sear the rough edges

Season brisket pieces. Heat oil in a heavy pan and brown every broad surface and irregular edge.

Braise until it collapses

Put beef in the slow cooker. Add spices, chilli, tomatoes, stock and lime zest. Cook on low for 6 hours until easily shredded.

Reduce the sauce

Lift out the beef and shred it into varied pieces. Reduce the braising liquid until thick, then fold enough through the beef to make it glossy rather than wet.

Cook the cauliflower rice

Cook cauliflower rice in a broad dry skillet for 5 to 7 minutes. Season with lime juice and salt; keep the grains loose.

Build loose handfuls

Double up the lettuce leaves, then add cauliflower rice, brisket, salsa, avocado and cheddar. Do not overfill them into impossible little parcels.
