Put beef in the slow cooker. Add spices, chilli, tomatoes, stock and lime zest. Cook on low for 6 hours until easily shredded.
Lift out the beef and shred it into varied pieces. Reduce the braising liquid until thick, then fold enough through the beef to make it glossy rather than wet.
Cook cauliflower rice in a broad dry skillet for 5 to 7 minutes. Season with lime juice and salt; keep the grains loose.
Double up the lettuce leaves, then add cauliflower rice, brisket, salsa, avocado and cheddar. Do not overfill them into impossible little parcels.
