Burrito beef

  • 700 gbeef mince
  • 1 tbspextra virgin olive oil
  • 1 tbspground cumin, smoked paprika and oregano
  • 1 tbsptomato paste
  • 80 mlwater

Lettuce boats

  • 500 gcauliflower rice
  • 2 limes, zest and juice
  • 16 cos lettuce leaves
  • 300 grough tomato, coriander and jalapeño salsa
  • 1 avocado, roughly chopped
  • 120 gmature cheddar, coarsely grated
  • 120 gGreek yoghurt

Crust the beef

Heat oil in a wide pan. Press beef into one uneven layer and leave it alone for 4 minutes until deeply browned underneath.

Break, spice and glaze

Turn in rough sections, add spices and tomato paste, then cook for 3 minutes. Add water and reduce until the beef is glossy, not wet.

Lime the cauliflower

Cook cauliflower rice in a separate wide pan for 5 to 6 minutes. Season with lime zest, half the juice and salt.

Set up the fillings

Keep lettuce leaves cold and dry. Put salsa, avocado, cheddar and yoghurt in separate rough bowls.

Build at the table

Spoon cauliflower rice and beef into lettuce, then let everyone add the rest. Use doubled leaves for the smaller or naturally torn pieces.
