Crust the beef
Heat oil in a wide pan. Press beef into one uneven layer and leave it alone for 4 minutes until deeply browned underneath.

The trick is treating the beef like a smash burger rather than constantly stirring it. Let one side crust, break it into rough pieces, then add the spices after the moisture has cooked away.

Turn in rough sections, add spices and tomato paste, then cook for 3 minutes. Add water and reduce until the beef is glossy, not wet.
Cook cauliflower rice in a separate wide pan for 5 to 6 minutes. Season with lime zest, half the juice and salt.
Keep lettuce leaves cold and dry. Put salsa, avocado, cheddar and yoghurt in separate rough bowls.
Spoon cauliflower rice and beef into lettuce, then let everyone add the rest. Use doubled leaves for the smaller or naturally torn pieces.
