Fish

  • 1.8 kgwhole snapper, scaled and gutted
  • 3 tbspextra virgin olive oil
  • 2 lemons
  • 1 bunchflat-leaf parsley stalks and leaves
  • 2 clovesgarlic, thinly sliced

Caper dressing

  • 2 tbspbaby capers, roughly chopped
  • 60 mlextra virgin olive oil
  • ½ cupreserved parsley leaves, roughly torn

Dry and score

Pat the fish very dry. Make three shallow diagonal cuts on each side, brush with oil and season inside and out.

Fill without packing

Stuff the cavity loosely with one sliced lemon, parsley stalks and garlic. Keep air spaces so the fish cooks evenly.

Commit to the first side

Cook on a clean, oiled barbecue grill over medium heat for 10 to 12 minutes without moving it, until the skin releases.

Turn once

Use two wide spatulas to turn. Add the second lemon, cut-side down, and cook for 8 to 10 minutes until the flesh flakes near the backbone.

Dress the opened flesh

Mix capers, dressing oil, torn parsley and juice from the charred lemon. Spoon it over the fish as it naturally opens on the platter.
