Chicken meatballs

  • 750 gchicken mince
  • 120 gfirm ricotta
  • 80 gfinely grated Parmesan
  • 50 ggluten-free breadcrumbs
  • 1 large egg
  • 1 tspdried oregano

Parmigiana bake

  • 2 tbspgarlic-infused olive oil
  • 700 mltomato passata
  • 200 gfresh mozzarella, roughly torn
  • 1 cupbasil leaves, torn

Heat the tray

Heat the oven to 220°C with a large heavy tray inside. Oil a shallow baking dish separately.

Mix just enough

Combine chicken, ricotta, Parmesan, breadcrumbs, egg, oregano, salt and pepper until the mixture only just holds together.

Bake rough meatballs

Shape 18 to 20 slightly uneven meatballs. Put them on the hot oiled tray and bake for 12 minutes until browned underneath.

Finish in sauce

Pour passata into the baking dish, add meatballs and torn mozzarella, then bake for 12 to 15 minutes until bubbling and mottled gold.

Rest before basil

Rest for 5 minutes, then tear over basil and finish with every crisp cheese edge left in the dish.
