  • 650 gzucchini, coarsely grated
  • 220 gstreaky bacon, chopped
  • 4 spring onions, sliced
  • 9 large eggs
  • 130 mlpouring cream
  • 80 galmond meal
  • 150 gvintage cheddar, grated
  • 200 gfull-fat ricotta
  • ¾ cupfresh basil, roughly torn

Drain the zucchini

Heat the oven to 190°C. Toss grated zucchini with 1 teaspoon salt and leave for 10 minutes. Squeeze it very firmly in a clean tea towel.

Brown the bacon

Cook bacon in a dry frying pan for 6 to 8 minutes until crisp at the edges. Add spring onion for the final minute. Cool slightly.

Mix without crushing

Whisk eggs and cream. Fold in almond meal, cheddar, zucchini, bacon mixture and basil. Season with black pepper.

Keep the ricotta visible

Pour into a lined 20 x 30 cm tin. Dot spoonfuls of ricotta across the surface and press them in lightly.

Bake until just set

Bake for 35 to 40 minutes until golden and the centre springs back. Rest for 15 minutes before slicing.
