Egg muffins are one of the most useful keto recipes because one tray sorts several breakfasts. A spoonful of cream keeps them tender, while cooling the bacon before mixing prevents rubbery eggs.

Egg muffins

  • 180 gstreaky bacon, finely chopped
  • 10 large eggs
  • 80 mlthickened cream
  • 140 gmature cheddar, grated
  • 60 gbaby spinach, finely sliced
  • 15 gbutter, for greasing

Heat and grease

Heat the oven to 180°C. Grease a 12-hole standard muffin tin generously with butter, including the top surface.

Cook the bacon

Fry the bacon until crisp. Drain it well and let it cool for 5 minutes.

Mix without foam

Whisk eggs, cream, salt and pepper just until combined. Fold through cheddar, spinach and cooled bacon.

Fill the tin

Divide the mixture between the holes, stopping about 5 mm below the rim.

Bake gently

Bake for 17 to 20 minutes until puffed and only just set in the centre. Rest for 5 minutes, then loosen with a thin spatula.
