Keep the apples uneven
Heat the oven to 190°C. Toss rough apple pieces with lemon, maple, cinnamon and flour. Divide between six ovenproof pots.

Soft cinnamon apples under a rubble of toasted oats and almonds, baked in small pots so every serve gets a crisp edge and its own bubbling spill.

A crumble should look like rubble, not sand. Rubbing the butter only partway in creates clumps of different sizes, while roughly cut apples soften at slightly different rates and keep the filling alive.

Rub butter into oats and almond meal until some parts are sandy and others form grape-sized clumps. Fold in chopped almonds and maple.
Scatter crumble over the apples without levelling it. Set the pots on a tray to catch any natural bubbling spills.
Bake for 30 to 36 minutes until the apple yields to a knife and the highest clusters are deep gold.
Rest for 10 minutes. Serve warm with plain yoghurt if you like.
