Stir tamari, maple syrup, ginger and sesame oil together in a medium bowl.

Add salmon and toss until every piece is lightly coated. Heat a large non-stick pan over medium-high heat.
Add salmon in one layer and cook for 5 to 7 minutes, turning the pieces, until caramelised outside and just cooked through.
Heat the rice until steaming, then divide between four bowls.
Add cucumber, avocado and edamame. Top with salmon, sesame seeds and a generous squeeze of lime.
