Salmon and glaze

  • 600 gskinless salmon, cut into chunks
  • 2 tbsptamari
  • 1 tbsppure maple syrup
  • 2 tspfresh ginger, finely grated
  • 1 tsptoasted sesame oil

Bowls

  • 600 gcooked jasmine or brown rice
  • 2 Lebanese cucumbers, ribboned
  • 1 avocado, slicedUse a portion that suits you

  • 1 lime, cut into wedges
  • 1 tbsptoasted sesame seeds

Mix the glaze

Stir tamari, maple syrup, ginger and sesame oil together in a medium bowl.

Coat the salmon

Add salmon and toss until every piece is lightly coated. Heat a large non-stick pan over medium-high heat.

Cook hard and fast

Add salmon in one layer and cook for 5 to 7 minutes, turning the pieces, until caramelised outside and just cooked through.

Warm the rice

Heat the rice until steaming, then divide between four bowls.

Finish the bowls

Add cucumber, avocado and edamame. Top with salmon, sesame seeds and a generous squeeze of lime.
