Heat the oven
Heat the oven to 155°C. Pat every surface of the ribs dry and salt generously.

Short ribs are made for carnivore cooking: fat, connective tissue and time create the sauce for you. There is no tomato, wine, sugar or packet gravy here. Browning and reduction do the flavour work.

Heat the oven to 155°C. Pat every surface of the ribs dry and salt generously.
Heat tallow in a heavy casserole over medium-high heat. Brown the ribs in batches for 10 to 12 minutes total, turning until every meaty side has a dark crust.
Return all ribs to the pot, bone-side down. Add broth; it should reach about halfway up the meat. Cover tightly and cook for 2 hours 45 minutes to 3 hours until a fork slides in easily.
Move ribs to a warm plate. Skim only excessive surface fat, then boil the braising liquid for 8 to 12 minutes until glossy and lightly syrupy.
Turn the heat off and whisk in cold butter. Return the ribs and spoon over the glaze. Rest for 10 minutes before serving.
