Heat a wide cast-iron pan over medium-high. Add tallow, then press the beef into one broad, uneven layer and season.
Leave the beef untouched for 4 minutes. Turn it in large rough sections and cook for another 3 to 4 minutes before breaking it into craggy pieces.
Divide the beef and its crisp crumbs between bowls. Tear or halve the eggs over the top and finish with butter, if using, and another pinch of salt.
