Make a cold chicken paste
Heat the oven to 220°C. Process cold chicken, eggs, Parmesan and salt until fine and tacky, scraping the bowl twice.

Chicken bread behaves far better as a flatbread than a tall loaf. Processing the raw breast with egg creates a cohesive paste; pressing it thinly and flipping it mid-bake drives off moisture and gives the base enough strength for wraps or pizza.

Divide between two greased sheets of baking paper. Cover with more paper and press into uneven 24 cm ovals about 5 mm thick. Peel off the top sheets.
Bake for 12 to 14 minutes until set and patchy gold. The centre must reach at least 74°C.
Flip each base onto clean baking paper and bake for 6 to 8 minutes until the jagged edges brown.
Cool on a rack for 5 minutes before folding, filling or adding pizza toppings.
