Prawns need almost no oven time. Pat them dry, sear just one side in butter and add them late. That gives the pizza browned seafood without the rubbery little commas that come from double cooking.

Chicken crust

  • 500 gcooked chicken breast, very finely shredded
  • 1 large egg
  • 60 gfinely grated Parmesan
  • ½ tspfine sea salt

Prawn top

  • 300 graw peeled prawns, patted very dry
  • 50 gsalted butter
  • 130 gfresh mozzarella, roughly torn and drained
  • 60 gfinely grated Parmesan

Dry the chicken

Heat the oven to 220°C. Spread the shredded chicken on a lined tray and bake for 8 minutes to drive off surface moisture. Cool for 5 minutes.

Make one firm base

Mix chicken, egg, Parmesan and salt. Press into a rough 28 cm round between two sheets of baking paper, about 7 mm thick. Peel off the top sheet.

Pre-bake both sides

Bake for 14 minutes until the edge is deeply golden. Flip onto a clean sheet, remove the old paper and bake for 5 minutes more.

Colour one side only

Melt half the butter in a hot frying pan. Sear the prawns for 45 seconds on one side, then remove while still raw through the centre.

Build loose patches

Dot the crust with mozzarella, add prawns with the seared side facing up and scatter Parmesan around the edges. Spoon over remaining melted butter.

Finish fast

Bake for 5 to 7 minutes until the prawns are just opaque and the Parmesan is lacy and gold. Rest for 3 minutes.
