Bacon protects leaner corners of beef and bastes the skewer as it cooks. Fold each strip differently and avoid packing the pieces into a solid log, or the bacon between them will stay pale and soft.

  • 800 gbeef scotch fillet, cut into varied chunks
  • 300 gstreaky bacon
  • 1 tbspbeef tallow, melted
  • 1 tspfine sea salt

Cut by feel

Pat the beef dry and cut it into pieces of similar weight but varied shape. Tear any unusually long bacon rashers in half.

Thread with space

Alternate beef with loosely folded bacon on eight skewers. Leave small gaps so the bacon edges meet the heat.

Season simply

Brush with tallow and season with salt. Heat the barbecue to medium-high with a cooler area at one side.

Render, then char

Cook for 10 to 12 minutes, turning each skewer as the bacon renders and beef browns. Move to the cooler area if bacon flares.

Rest in the juices

Rest for 5 minutes on a warm platter, rolling the skewers once through the collected juices.
