Dry the chicken
Heat the oven to 220°C. Spread the shredded chicken on a lined tray and bake for 8 minutes to drive off surface moisture. Cool for 5 minutes.

Mix chicken, egg, Parmesan and salt. Press into a rough 28 cm round between two sheets of baking paper, about 7 mm thick. Peel off the top sheet.
Bake for 14 minutes until the edge is deeply golden. Flip onto a clean sheet, remove the old paper and bake for 5 minutes more.
Brush the crust with butter. Scatter over mozzarella and bacon, leaving three loose wells. Crack an egg into each well.
Bake for 7 to 10 minutes until the whites are set at the edges but the yolks still wobble. Rest for 3 minutes before slicing.
