Carnivore does not have to mean mince on repeat. Salmon brings richness of its own, and eggs turn it into a complete plate. Browning the butter separately prevents burnt milk solids while the skin crisps.

Salmon and eggs

  • 720 gskin-on salmon fillets
  • 4 large eggs
  • 80 gbutter
  • 1 tbspbeef tallow
  • 1 to tastefine salt

Cook the jammy eggs

Lower eggs into simmering water and cook for 7 minutes. Transfer straight to iced water, peel and halve.

Dry the salmon

Pat the salmon skin extremely dry and salt both sides. Heat tallow in a heavy frying pan over medium-high heat.

Make the skin crisp

Place salmon skin-side down and press gently for 20 seconds so it stays flat. Cook for 5 to 7 minutes until the skin is crisp and the flesh is mostly opaque.

Turn once

Flip and cook the flesh side for 1 to 2 minutes, then rest on a warm plate.

Brown the butter

Wipe the pan. Add butter and swirl over medium heat until foaming, golden and nutty smelling. Spoon over salmon and serve with the eggs.
